Here is a portrait in tribute to the noble beetroot — beloved vegetable of Apicius, renowned gourmet of ancient Rome. Offered by the Greeks to Apollo in his temple at Delphi, and no stranger to the Hanging Gardens of Babylon, Shelley immortalised the august tuber in his famous Ode:

                 'O rough-kissed root! Thou hast slept in nature's bosom,
                 Now rendered in all thy glory, a vision of beauty.'
